Freezer Beef Stew
I used to pin freezer meal plan after freezer meal plan, all with perfectly good intentions of being prepared and making life in the kitchen simpler.
Well, we know what they say about good intentions.
Anyways, when I embarked on this Whole30 journey, I knew I had to be well prepared, otherwise I would struggle with temptation and starvation (dramatic? I know.). So I made several different meals that were compliant and freezer-friendly, in order to stave off the food demons along the way.
So far, this stew has been a favorite. I think I will make another batch even after the Whole 30 is over, just to have on hand for easy lunches.
It's really so easy to make!
First, you chop up all of your vegetables.
So fresh and healthy - yum!
Next, brown your beef. I used ground beef, because that's what was on sale. You could use shredded beef or stew meat, if you prefer.
Saute your onions in the same pan. Add some garlic if you like!
Then, dump it all in a big pot and add your broth. Bring to a boil, then let simmer on low heat for 25 - 30 mins.

Once cooled, just ladle it into individual cups and freeze. I used large Solo cups, and placed each one in a freezer bag once it was solid. If you want smaller portions, you could even use silicone muffin tins as a container.
The point is - it should be easy! So use whatever you have on hand.
Now, when I need a lunch for the office, I just grab a cup and go. It's thawed enough by lunch time to dump into a bowl and heat up quickly.
