Whole 30: Freezer Meals
I wrote about my decision to try the Whole 30 challenge a few days ago. My main, overarching goal for this 30 day challenge?
...to complete it.
Do you feel me? It seems like I have been talking about "doing something" about getting healthy for the past...forever. And I always start off with such great intentions, but eventually, something breaks down and things get derailed.
So, for the past month or so, I've been making grocery lists, meal plans and meal-prepping like a mad-woman. My theory is, if I'm over-prepared and have a lot invested in this, I'm less likely to fail.
I have always been interested in freezer cooking - I've pinned all kinds of great ideas on Pinterest - but realistically, for just the two of us, making a quick meal hasn't really been a problem. And, truthfully, cooking all day is the last thing I want to be doing on my weekends off! I often further talk myself out of it by thinking "those will just sit in the freezer for months!"
But for this 30 day challenge, it seemed to make sense. I would be cooking these meals with a very specific purpose, and I knew they would get eaten (within a reasonable time frame, too!)
So, I selected a few freezer meals - breakfast, lunch and dinner - from all over Pinterest, and made a shopping list.
It didn't seem too daunting.

Man, I have all kinds of respect for the people who do this freezer cooking thing on a regular basis. It's hard work! I mean, it's enjoyable, if you like cooking (which I do) but the clean-up is horrendous. (I'm not even that messy of a chef!)
It was certainly worth it though, and the sense of accomplishment I felt after my two days (yes, it took me two days - no judging!) in the kitchen was certainly rewarding. So was all of the healthy food in the freezer!

Any healthy freezer meals would be greatly appreciated - maybe I'll make this a thing from now on.
