Corn Dogs for Lunch
We've been trying to get more creative for lunches throughout the week. This week, I decided to make some little corn dog muffins that we could grab on the go.
A lot of the time, we have leftovers for lunch - that's what happens when you're cooking for two. Every now and then, when we go out to eat or we make a smaller dish, it's nice to have something in the fridge, ready to go!
This was really so simple - take your favorite cornbread recipe (here's a secret - I use Jiffy right out of the box!) Then cut up your favorite hot dogs (I used all beef dogs, but you could do whichever type of dog you like.) Cut each dog into four pieces and scoop your cornbread into mini muffin tins.
Stick each hot dog piece into the middle of each muffin. Caution: if you overfilled your tins, this could get messy. Throw them in the oven - I just followed the instructions on the Jiffy box, which was about 10 minutes at 400 degrees.
Three of these little guys make a pretty good lunch. Just heat them up in the microwave for 30 seconds and snack away!
Having lunch ready to grab-n-go really makes early mornings just a smidge easier.
