Holiday Fudge
Well folks, the holidays are upon us. And so we begin the season of gift exchanges, Secret Santa, holiday carry-ins and general gift giving. I've found a simple, versatile and tasty treat that has served me well during the holiday season - Carnation® Famous Fudge!
Full disclaimer here: I don't always use Carnation® Evaporated Milk, but this recipe is based off of the one found on their website. My mom taught me how to make this fudge, but I never fully appreciated it until I started giving it as gifts during the holidays (and at birthdays...Mother's Day...Father's Day... ok, I like making fudge!)
So there are three things I love about this fudge recipe:
1. It only takes 5 - 7 minutes to make (plus set-up time)
2. You can change the flavor of the fudge by using different baking chips. Our family favorites are basic chocolate (semi-sweet morsels), peanut butter (the Reese's chips are phenomenal!) and white chocolate. There are so many different baking chips flavors out there - I'm determined to try them all!
3. Fudge makes such pretty gifts or treats. You can put it in a little holiday tin or dish with a cute tag or label.
You could simply put it on a tray or plate and set it out at a party. Or, you can make reindeer faces and give them to your neighbors!
Holiday Fudge
1 1/2 cups granulated sugar
2/3 cup evaporated milk
2 tablespoons butter or margarine
1/4 teaspoon salt
2 cups miniature marshmallows
1 1/2 cups baking chips (any flavor!)
1 teaspoon vanilla extract
Combine sugar, milk, butter and salt in heavy-duty saucepan. Bring to a rolling boil, stirring constantly. Continue stirring at a boil for 5 - 6 minutes. Remove from heat.
Add marshmallows, baking chips and vanilla. Stir vigorously, until chips and marshmallows are melted.
Pour into greased 8x8 pan and let sit until hardened. Cut into 1" squares and serve.
